Atlantic Bonito

Atlantic bonito are like mini tuna, usually 2 to 3 feet long and lightning fast. Look for them in coastal waters, often near the surface chasing bait schools. They're most active here in spring and fall when water temps are in the 60s. These guys travel in big schools, so when you find one, you've found a bunch. Watch for birds diving - that's a dead giveaway. Bonito fight hard for their size, making long runs and even jumping. We usually troll for them with small, fast-moving lures or live bait like menhaden. Here's a local trick: on windy days, switch to metal jigs - they cut through the chop better. Bonito aren't prized for eating around here, but they make great cut bait for bigger game. When you see those blue-green backs cutting through the water, get ready for some fast-paced action!

Gag Grouper

Gag grouper might not win any beauty contests, but they're a blast to catch. These guys usually run 20 to 30 inches, hanging out near rocky bottoms and reefs. You'll find them offshore year-round, but they really bunch up for spawning in winter. Gags are ambush predators, so we target structure - wrecks, ledges, you name it. They love live bait like pinfish or mullet. When you're reeling one in, be ready for that first big run - they'll try to dive back into their hole. Keep your rod low and reel fast to turn their head. The meat is top-notch, mild and flaky. Here's a local trick: look for stone crab traps. Gags love crab, so they often lurk nearby. Just remember, these fish grow slow and change sex from female to male as they age, so we're careful about what we keep to protect the population.

Goliath Grouper

Goliath grouper live up to their name - these monsters can hit 8 feet and 800 pounds! You'll spot them around shallow reefs and wrecks, sometimes in brackish water. They're protected now, so it's catch-and-release only, but man, what a thrill. These guys are ambush predators, gulping down whole fish, crabs, even small sharks. They spawn in summer, gathering in big groups. When you're fishing near structure, don't be surprised if a goliath shows up and tries to steal your catch. They're not shy! If you hook one (by accident, of course), you're in for the fight of your life. Use the heaviest gear you've got - we're talking 80-pound class at least. My tip? Create some commotion by bouncing your bait off the bottom. Just remember, these fish are slow-growing and long-lived, so handle them carefully and get them back in the water quick.

Wahoo are speed demons of the sea, usually 3 to 5 feet long but can reach 8 feet. You'll find them in open water up to 66 feet deep, often near floating debris. They're solitary or in small groups, except during mating season. Here in Destin, July to November is prime time. Wahoo put up an incredible fight - they can hit 60 mph! We troll for them at high speeds, 12-15 knots, using wire leaders since their teeth can slice through regular line. My go-to setup is a 30-50 wide reel with minnow lures or ballyhoo on double J-hooks. The meat is mild and sweet, perfect for fish tacos. Wahoo are a real trophy - both for the challenge and the table. One tip: look for them near oil platforms, especially in cooler months. When you hook one, hang on tight and get ready for some serious action!
