Adults typically range from 5-20 pounds, though the biggest can top 35 pounds. They put up a good fight when hooked, often making a run for cover. We target them May through October when they're spawning near structure. Fresh cut bait like cigar minnows works well, but live pinfish are your best bet for trophy snappers. Drop your bait all the way to the bottom, then reel up a few cranks. When you feel that telltale thump, set the hook hard and start reeling - these powerful fish will try to break you off in the rocks if you give them a chance. The meat is mild and flaky, perfect for grilling or frying up fresh.

Greater Amberjack

Greater amberjacks are bruisers that'll test your stamina. These powerful fish hang around deep wrecks and reefs, typically in 150-300 foot depths. Most run 20-50 pounds, but the biggest can top 100 pounds. We target them year-round, with the best action in spring and fall. They're aggressive feeders, hitting live bait and jigs with equal enthusiasm. When hooked, expect a bulldog fight as they try to bust you off in the structure. Use heavy tackle - 80-pound braid and a sturdy rod. My go-to rig is a live blue runner on a circle hook. Drop it down, let it swim, and hang on when that rod doubles over. Work them up quickly to avoid shark tax. The meat is good eating, but be aware of size and bag limits. Catching a big AJ is a true test of an angler's skill and strength.

Greater Amberjack

Mahi Mahi or Common Dolphinfish

Most run 15-30 pounds, but the big bulls can push 50 pounds or more. We find them around floating debris and weed lines, usually 5-30 miles offshore. They're fast swimmers and hit lures or live bait aggressively. When hooked, expect some epic jumps and runs. Late spring through fall is prime time, with peak action in the summer months. Trolling with ballyhoo or artificial lures works well. My trick is to toss out a handful of live bait to get them fired up, then cast a hookless teaser. Once they're in a frenzy, pitch in a hooked bait and hold on tight. The meat is absolutely delicious - firm, mild, and great on the grill. Mahi are a blast to catch and even better to eat.

Light tackle adds to the challenge - 30 pound test is plenty. I like slow-trolling live ballyhoo on circle hooks. When you see one in the spread, freespool a bait back to it. The bite is often subtle, just a light tap. Set the hook and enjoy the ride! While we practice catch and release, the thrill of battling a sailfish is unforgettable.

Wahoo are the speedsters of the Gulf, capable of 60 mph bursts. Long and sleek, they're built for speed with razor-sharp teeth. Most run 15-30 pounds, but 50+ pounders aren't uncommon. We find them near drop-offs and current edges, usually in 100-300 foot depths. Spring and fall are prime seasons as they migrate. High-speed trolling is the ticket - we'll run lures at 12-15 knots to trigger strikes. Wire leaders are a must to prevent bite-offs. When hooked, expect blistering runs and some impressive aerial displays. My secret weapon is a purple/black Ilander lure with a ballyhoo. Troll it way back in the spread and hang on. The meat is fantastic - firm, white fillets that are great for sashimi or lightly grilled. Landing a wahoo is always a highlight of any trip.
